Savory Oats

Andddd it’s warm in Florida again. Mark my words, one day I’ll move out of Florida! Sorry for no post last night, we had a long day of errands, shopping, crowd-battling and more, so when we came home it was time for me + Ross + a movie + NO computers! It was actually awesome, I think we should institute a computer curfew around here every night!

While we were out I found Caitlin’s Christmas present – Edward says Merry Christmas, Caitlin! ;)

P1080140 We also stopped for dinner out – I had a hummus pita from Pita Pit with practically every veggie – spinach, romaine, tomatoes, sprouts, mushrooms, cucumbers, green bell peppers, black olives, and guacomole. I think that was all. Basically it was a salad wrapped in a pita. :)

This morning I felt like a savory breakfast. Now, in my pre-vegan days, a savory breakfast meant an egg white omelet, a breakfast burrito with scrambled eggs, or turkey bacon or Canadian bacon. Obviously those were all out since none of those qualify! I decided to try something I tried once before and couldn’t stand – savory oats. Well, I don’t know what I was thinking last time, because these were AMAZING!

I cooked some diced zucchini, eggplant, black olives and mushrooms in a skillet with some EVOO, garlic powder, pepper, and kosher salt. Meanwhile I cooked 1/3 cup oats in water. I combined the two when they were done and topped them with a dollop of garlic hummus and some vegan cheeze (not necessary, but I have some that needs to be used up asap). After this picture I ended up stirring it all together and the hummus throughout it made it one creamy, savory, absolutely delicious mess!

I can’t wait to make savory oats again! Now it’s time to head out on a few more errands, we have a couple more stores to hit up, and then I have a couple presents to make and we’ll be done! Oh yeah, minus one little thing – Christmas presents for Ross. Eeek! Ideas that I’ve had so far have not been coming to fruition. Either stores are sold out, prices are way too expensive, or more. What have you gotten/ are planning on getting for your significant other?

    Dan and I “got each other” our Canon Rebel. Since our anniversary is in January, it was a Christmas + anniversary gift to each other!

    This isn’t a “significant other” gift, but my best friend and I are taking each other out to brunch so that we can spend some one-on-one time together!

    Rob and I don’t do gifts but I ended up getting him in the family Secret Santa! I got him a couple books (Eating Animals and What’s Your Poo Telling You?), adorable raw heart shaped cookies from One Lucky Duck (not as good as yours — should have given him those instead!) and three honeycrisp apples (his favorite).

    I’ve gotten Nate a few things, but since he’s so interwebs savvy I don’t want to risk him finding out. But… we can safely say that I am the best gift-giver EVER. He’s gonna love them.

    I ADORE pita pit! I’m going to ON in Feb and that is one of the first things i’m planning on having for lunch :)

    I miss Pita Pit! They closed ours! The hummus pita with all the veggies was my absolute fave.

    As for gifts for Andy, I got him clothes (from J.Crew but on sale for AWESOME prices. I was so stoked to get him stuff for so cheap! I got him a cashmere sweater for 19.99, a sweater vest for 19.99 and a tie for 4.99. It looks like I spent a small fortune.) Andy always needs clothes for teaching and prefers to dress professional so I know he’ll love these. I also got him a desk calendar and some books off amazon. (also amazingly cheap) I need stocking stuffers though!

    My hubby and I normally don’t do the whole gift exchange. However I am getting him something small. He loves Forrest Gump and they have blu-ray box set so thought about getting him that with some of his favorite chocolate, Ritter Sport

    Lucas and I aren’t exchanging gifts this year. We both start working in January after spending the past 4.5 years as full-time students, so we plan to buy ourselves something nice after a few months of saving/paying down our debt. Boring, but hopefully worth it!

    This is our first Christmas married, so it’s a little hard. Before, I was spendingmy money, and he was spending his, but now with joint accounts, it’s a little different. Picking out gifts for each other is still fun, but I think we are going to skip gifts, and instead buy a few of our wedding pictures on canvas to hang up in our house. So it’s a gift we are getting together for both of us!
