It’s official – Christmas is here!
I kicked off my break a little early when a handsome fellow showed up at my work for a picnic lunch. It was gloriously beautiful outside (I’m one of the “weird” Floridians who thrive in cooler weather) so we picnicked in the little park behind the church that my office is located in.

I love when he doesn’t work (he’s a teacher so he’s off for two weeks) so we can hang out more.
Mr. Ross brought Subway for our picnic lunch, and along with it he brought me a Dr. Pepper. I was honestly just not feeling it – I took a couple sips throughout lunch but ended up giving most of it to him.
Ross was sweet enough to acquiesce to my request of slicing a quarter of an avocado from home that I could add to my sub. I knew I had a long afternoon of battling traffic ahead, so I wanted to make sure I wouldn’t get hungry later. Hungry Lindsey + errands + crappy holiday and rush hour traffic is an equation that would surely equal disaster, or at least one very cranky Lindsey. (Yes I’m done talking in third person now).
This sub was very well done and loaded with veggies! Ross thinks it was a manager who made it, which was why they didn’t skimp out on my veg.
I got a six inch veggie delight on honey oat with lettuce, spinach, black olives, cucumber, green bell pepper, tomato and a tiny bit of light honey mustard.
Thanks for lunch, hon! Immediately after work I headed out into hellacious traffic to finish my last two Christmas gifts. As I tweeted, my goal was to be home by dark. Well that didn’t quite happen, but I think I cheated myself – I mean, Winter Solstice was yesterday so that makes today what, the second shortest day of the year? I consoled myself in thinking I would have been home by dark had it been springtime.
Leftovers were a must as we’re leaving for Sarasota tomorrow morning. Enter leftover vegan three bean chili in my cute little snowman mug (Wally World find!).
Time to go pack! Good night friends!
Are you traveling over the holidays? How long will you be gone or away from work or home? We’re leaving tomorrow and will come back Sunday the 27th, because I have work for sure on the 28th and 29th. My work schedule is really flexible though, so I’m actually thinking/ planning on heading back down to Sarasota next Wednesday through Saturday, too!

I love avocado on my subway subs. I have only seen ONE subway in the world that had avocado as an option and that was in CA, obviously!

I will not be going home for Christmas since we made it home for Thanksgiving. However the drive is about 8 hours with good traffic! Ick!
