Bubbly New Year

My New Year’s Eve was spent in a wonderful way. I reflected over my 2009 (and past decade!), there was a family effort in making appetizers for a dinner buffet, we watched a movie, watched the ball drop on the TV (and were bemused by several artists’ outfit selections) and we broke out the bubbly. Selections included:

  • phyllo wrapped asparagus spears (Dad and Megan)
  • homemade veggie sushi (Ross and I)
  • spinach sausage bread (Mom)
  • Cheese and crackers (Megan and Ross assembled)
  • smoked chicken wings and thighs (Daniel – Megan’s boyfriend – brought his smoker and these were all him!)
  • tortilla chips and salsa and homemade guac (yours truly!)
  • whole wheat spinach mushroom bread (yours truly!)
  • pineapple, cantaloupe, kiwi (group effort)
  • vegan chocolate cake and chocolate coconut milk ice cream (I do not recommend that recipe I found so I won’t share it– way too much sugar)
  • champagne!! (times two ;) )

Guacamole recipe:

  • 2 avocados (very ripe)
  • handful of chopped cilantro
  • juice of half a large lime
  • 1 small tomato, diced
  • 2 garlic cloves, diced
  • 1/2 small onion, diced

It was pretty decent! My first time making guacamole from scratch. :)

I love my family, I love movies and relaxing and I love champagne. Last night was perfectly my cup of tea. :)

This morning was cloudy, cool and rainy, which obviously means we all slept in. :) Eats of the day were pineapple, an english muffin with peanut butter, some chips and salsa/ guac and a few asparagus spears.

I went for a 2 mile jog and did a strength workout yesterday, so today I just did a quick strength routine:

  • standing bent over rows, 10 lbs, 3 x 15
  • butterflies on a stability ball, 10 lbs, 3×15
  • stability ball crunches, 100
  • overhead tricep extensions, 10 lbs, 3×20
  • planks
  • russian twists, 10 lbs, 3×20

super quick and easy. :)

My Nannie and my Aunt came over for a New Year’s dinner, and it was quite the filling, veggie-riffic spread for me! A large baked sweet potato with vegan Smart Balance and chickpeas (rinsed, dried and cooked in a nonstick skillet with cinnamon, nutmeg, chili powder, garlic powder and kosher salt), corn and steamed veggies.

While I was completely satisfied with my meal, I will be honest – the ham looked pretty darn tasty. I think my tongue was just craving the savory saltiness of the ham though, and I’m sure I’d not be feeling so happy right now had I eaten it. I don’t know if I’ll be a vegan forever, but I still think it’s the best thing for me for now. :)

I really can’t wait to see what 2010 brings. I feel like there are so many wonderful changes and opportunities on my horizon, and I can’t wait to share with you! Enjoy the rest of your New Year’s Day, and I’ll see you all again soon! Here’s hoping tonight includes more bubbly. ;)
