I’ve been a Vita-Mixen vixen today.
Breakfast started as Melissa and I split a smoothie of a frozen banana, frozen pineapple, frozen blueberries, plain almond milk, spinach, ice and chocolate brown rice protein powder. I topped mine with some awesome Almond Granola from Trader Joe’s that Melissa brought me.
Wow, helllo there Vita Mix. So, I think I need to actual read a manual/ directions/ recipes and what not, but the high speed – holy. cow. It’s power is massive. Me like.
Since I was busy with emails and trying to figure out more stuff with this whole going back to school thing, breakfast was a little later and I only snacked on the small amount of leftover fat free refried beans from last night.
I brought along an apple, almond butter, and raw veggies to snack on at work (and include in a more well-rounded lunch) but I just never had time to eat. If you’re new to the blog please don’t think my skipping meals is habit – I promise it is not. I was already multi-tasking way too much to even think about food until around 4:00.
Fortunately dinner was ready in the crock pot right when I got in! I made a “kitchen sink” soup. I threw in random amounts (the last of what I had) of dried black beans (pre-soaked), lentils, split peas, frozen corn, frozen spinach, onions, garlic, broccoli, carrots, vegetable stock, water, spices (chili powder, garlic powder, cumin, oregano, black pepper and a tiny tiny bit of kosher salt). Once you got over the burn-your-tongue temperature, it was not bad for a thrown together crock-pot soup!
I picked up this rosemary bread from Fresh Market on my way home. It was pretty good! Not as good as my beloved rosemary bread from Ward’s, but still tasty. I had two more half slices like you see below.
Then it was time to play with my new toy again.
(Please excuse my disgruntled appearance – it’s been the longest week ever, and probably the longest day of the longest week).
Banana soft serve! It’s been far too long. Despite the fact that it may snow in Florida (!!!) tomorrow, this was one thing I was looking forward to making again! Wow – the texture was so much better in a properly-working appliance! We topped it with some vegan-friendly Ghiradelli semi sweet chocolate chips for a delicious dessert.
On that note, it is close to bedtime! Tomorrow will be a long day too. Usually I don’t work on Fridays but it’s the end of a quarter so there’s lots of quarterly loose ends to tie up. Add in MORE hoops to jump through with college stuff, an eye appointment, errands and possibly/ probably driving down to Orlando tomorrow night and DANG! Busy day. Good thing I thrive under busy conditions.
Random question of the night – how tall are you? Melissa and I have been talking about bloggers tonight and apparently many of you all are shorter than you’d think! And some are taller! So spill – how tall are you? Also, I’m curious – do you think I’m short or tall? Bonus points for guessing my height (if you don’t already know it!)

I am 5’2″ – I kinda like being the girl everyone every towers over! lol
Hmm… I say you are on the tall side – 5’9″?
I am 5’1″. I would guess you are somewhere in the middle 5’5″ or 5’6″?
Ha, I’ve always wondered how tall other bloggers are as well. I’m 5’8 … I’m guessing you about 5’6.
I’m 5’6″ and I’d guess you are average height so somewhere between 5’4″ and 5’6″??
That dessert looks yummy!
This makes me so sad because I made banana soft serve once and then it broke our food processor and the blender won’t do it. I have a freezer full of frozen bananas that will never be made into delicious soft serve.
and I’m 5’3
The texture of your banana soft serve is SO different than when I’ve made it… I guess the blender really does make the difference.
I’m 5’10″ – and based on the pic of you there I’m guessing you’re around 5’8″ ? I’m a terrible judge of height though. I’m always surprised to find out that people are shorter than I think, and then I discover that most of them wear heels, and I always wear flats.
I’m 5’0″ (5’1″ if I round up)… aka, really short.
You look tall to me! I am only 5’2. Your soft serve looks SO good, it’s been way too long since I have had it!
I am 5’5! I am guessing you are . . . 5’1?
I am 5’1. 5’2 on a good day!
Love that you are having fun with your new toy. It’s been quite awhile since I’ve had Banana soft serve. Seeing yours makes me want to make some now.
Have a great Friday Lindsey!
I am 5’3″ I would guess that you are 5’5″
I think I win the shortness contest at 4’11…and a half…yeah….
Are you 5’5 or 5’6?
oo this could be fun.. I am 5’5.5
you loko so cute!! I LOVE the vitamix! im only 5’2 yes little shorty that I am
I’m 5’3 but with I was tall and usually tell people I’m 5’5! Not sure if they believe me…
Glad to see all the other girls near the 5ft marker! I am 5’2 on a good day!
I’m 5’8″!! Love wearing heels and getting to that 6′ mark – although my husband hates it. He’s 5’10″.
I’m 5’4 I haven’t grown since middle school, in 6th grade I was taller than all the girls and then they kept growing and I stayed the same haha.
i’m 5’8ish!!!
I’m under the impression I’m 5 7 but whenever I go to the doctor I’m 5 6 and a half!! hee hee!
That soup looks AWESOME

That smoothie sounds delicious! I can’t wait to read more!
I would not know what to do with a Vitamix–but I would find out how to make banana soft serve immediately
I’m 5’5”…are you 5’5” or 5’6”?
I’m 5’5″ and just from that picture, I think you are 5’7″ but I could be way off. Cool question
