Good morning, loves, and happy FRIDAY!!! (Can you tell I’m crazy excited it’s Friday? I’m ready to move past this week). I had a sad start to my morning as I had to see Melissa off. It was so much fun hanging out, although I wish I hadn’t had to work!
I’m completely exhausted this morning and my body was craving something fresh, so I went with a juice. In my (overflowing!) juice I had three kale leaves, an apple, an orange, 2 carrots, half a large cucumber and a knob of ginger.
Meet my version of coffee.
Seriously, the fresh nutrients of the juice really rev my body up!
Before I settled on making a juice I snacked on a couple tiny slices of this mini loaf of whole wheat zucchini bread that my mom made a while back (I’ve had it in my freezer). Mom, it’s delicious! I love the chunks of zucchini (or apple? can’t tell)! Recipe, please!
I’m happy to report that I’m officially enrolled in two classes! It was quite the process with many obstacles, but I am victorious.
They’re both online – a Nutrition 1 (aka Fundamentals of Human Nutrition) course and a Technical Writing course. I’m excited! It’s so surreal that I’m starting classes again.
Time to get going – I just remembered another project I have to tackle this morning! Time to be efficient with my time!
Oh – and by the way. I’m 5’6/ 5’7.
I loved the diversity – I think you all thought I was anywhere between 5’1 and 5’9. If you didn’t share yesterday, please keep sharing your height! It’s so fun and makes this little online community a little more personal.


I agree 100% — juice is my coffee. I have been juicing for a few months and I am totally addicted. A fresh juice makes my body feel better

I feel the same way about morning juice (or smoothie in my case–no juicer!) They are like energy drinks for me.

I’m only 5’4″… and you know? I used to think i was SOOO short, then i realized i’m pretty average.
I wish i could have juice instead of coffee in the mornings, but the headache that would follow would cause major issues for my students!
You are a brave woman! You couldn’t pay me enough to go back to school. I hate school. LOL. Although nutrition classes actually sound like fun. You’ll have to give us little snippets from it when you find something really cool.

That juice and bread combo looks yummy! I’ve actually always been a little afraid of zucchini bread, but maybe I’ll try to make some myself!

I love zucchini bread. I had it around Thanksgiving time when my mom had it when I came to visit.
