Confession: when I was driving home from work yesterday, I felt sick, tired and actually thought, “wow I don’t know if I’ll post tonight – I have nothing to post about, and definitely am not in the mood to make a creative dinner!”
Fortunately I am blessed with a remarkable husband.
I came home from work to find him hard at work in the kitchen!
He set aside all of his work for the night and had researched vegan recipes, picked up supplies and buckled down to make an appetizer, two sides and an entree! He had plans for a dessert too, but we decided to wait for another time to try that recipe.
Ross says to inform you that he didn’t follow any recipe exactly, but I’ve linked to the recipes he printed off and based them off of.
For our appetizer we have avocado hummus with ciabatta bread. (Inspiration Recipe)
For one side we have marinated baby portabella mushroom caps stuffed with bell peppers, cashews, and capers . (Inspiration Recipe)
For our other we have an artichoke, olive and almond stuffed and roasted brussel sprouts. (Inspiration Recipe)
And for our entree we enjoyed a vegetable raggout polenta. (Inspiration Recipe) I think what I enjoyed most about this dish was that we were able to actually make this together in the kitchen.

And if an awesome husband wasn’t enough, I also have awesome blog friends! The lovely Julie sent me a package of vegan goodies to try! Chai Tea Scones, Chocolate Cherry & Sea Salt Scones, and Peanut Butter and Cacao Nibs Granola.
Um, wow, Julie, wow. Thank you so much! I sampled a bit of the Chai Tea Scone and it was so good. The smell alone had me!
Ross tried one of the Chocolate Cherry and Sea Salt Scones last night and was also a fan! Thank you again, so much! I can’t wait to meet you in a couple months, Julie!!
What a wonderful evening that put a rather dull, sick day into a peaceful, blissful, wonderful evening. I am so thankful to be so loved!
