Leftovers: The Remix

I think we’re all pretty aware of my general distaste of leftovers. I’ve just never been a fan! Tonight was definitely an exception though. After Ross’ wonderful evening in the kitchen last night I decided to use up some of the leftovers in a new way. Items to be used: half a can of garbanzo beans, the last of the brussel sprouts, and the last of the filling from last night’s stuffed brussel sprouts (diced artichoke hearts, olives, almonds). I combined all of the above with some frozen spinach (thawed) and a very small spaghetti squash that I had roasted. I threw the mixture in a small rectangular Pyrex dish and covered with some bread crumbs seasoned with paprika, oregano and garlic powder. 20 minutes later at 400 degrees and we have a completely different meal that used up several different leftovers!

One problem: Now we have plenty of leftovers of this! Good thing it was tasty and Ross loves taking leftovers for lunch! I just may try these cold tomorrow (our microwave at work is dead).

What better way to top a tasty dinner than with dessert, especially when the dessert is as guilt-free as banana soft serve topped with reduced fat unsweetened coconut flakes and some Godiva very dark chocolate with almonds.

Love that banana soft serve. Fun fact – did you know that I have a VERY hard time stomaching plain bananas, but I love them frozen (or baked in goodies)? Please tell me I’m not the only one with a picky palate. ;)

P.S. Anyone else think that if they’re going to drop close to a couple benjamins on sneakers, they darn well better run for me?

    I’m the same with bananas! The smell literally makes me want to be sick, but I love banana bread/muffins/etc. So strange :p

    I’m the same with bananas too! I gag if I try to eat them raw – I think it’s definitely a texture thing. But in baked goods etc, they’re so yummy!
    Love your blog – and I’m jealous of your Vitamixer!

    I love all frozen fruits. Yummm!!! Also with the shoes, I normally only pay about 75 – 100 bucks but I also use them all the time. I have to go a little cheaper because I replace my running shoes every 6 months or so due to miles

    Dang, those shoes are a lot! I try to pay at most $100. I wear out my sneakers much faster than average and dropping close to $200 every time would be killer on the wallet.

    I have a similar thing with grapes. I love fresh grapes, but the thought of anything grape flavored makes me ill.

    I can’t stomach plain bananas either!!! I LOVE them, but they make me sick!!! It’s sad :( But I’m glad I’m not alone!

    ahhhh i have been DYING to dry banana soft serve!!! i first saw it on someone’s blog a few months ago, and in hope to try it i threw some naners in the freezer. Stupid me, I threw it in with the SKIN on. Let’s just say I scraped at it for a good half hour before giving up and realizing that there was no banana soft serve in my future :( I’m actually going to go in the kitchen right now and freeze some bananas WITHOUT the skin :) :)

    Yes! I can’t believe how pricey sneakers are! Thank goodness for discount shops!
