B.Y.O.Q.

Howdy! Happy hump day and hooray for the week being downhill to the weekend! My hump day started with an old breakfast classic – pumpkin oats!

After getting my work on and hitting up the post office, I headed home for a late lunch/ snack. My appetite has been so off since I’ve been sick, and thus not exercising much. (Since it is just a head cold most people probably could continue to exercise, but heavy cardio is out for me right now since any germ-fest in my body exaggerates my asthma greatly. Plus I’m exhausted!) I snacked on a serving of multigrain pita chips (favorite!) and a serving of cooked tofu. I had warmed up some leftovers from last night, but just wasn’t hungry for them.

Dinner tonight was B.Y.O.Q. – Build Your Own Quesadillas! We definitely got into the layers tonight. :)

Our base of a 100 kcal La Tortilla Factory tortilla with homemade refried beans:

Fajita veggies (green bell peppers, onions, mushrooms sautéed in a little olive oil, juice from half a lemon and cumin, garlic powder, chili powder and kosher salt).

After dinner I got the baking bug. We picked up some al natural dried raspberries from the Greenwise bulk bins in our Publix. I guess they’re being discontinued from our Publix, so they were really cheap for now. Works for me, perfect inspiration for a baked good!

After hemming and hawing about what to make (complete with input from twitter friends!), I settled on an old favorite: Super-Charge Me! Cookies from page 210 of eat, drink & be vegan! While my cookbook is new, I’ve actually made variations of these cookies before. You may or may not be able to find a recipe online by googling “super charge me cookies” and it may or may not be the first link that pops up. ;) (Don’t worry, I think it’s legit and from an old blog of Dreena’s).

My cookies were mostly the same recipe except instead of raisins or other dried fruit I used dried raspberries, along with four tablespoons of vegan chocolate chips.

I made the cookies smaller than Dreena suggests, because I got two dozen cookies out of her suggested 11-12 cookies. For dessert, I enjoyed two cookies with some plain almond milk. Perfect night cap!

    yummm! super charge me’s with rasberries? I’m sooo down! (I wish I was more of a baker….I NEVER get the baking bug, unless it’s for brownies out of the box!).

    I love your “plop and griddl-ize” as technical terms. I use that line with my students all the time and it never fails to get a chuckle!

    ohh that quesadilla looks so yummy! I’ve just recently been trying a lot more vegan & vegetarian dishes.. thank you for your wonderful recipe inspiration!

    Ahh – the timing of your post was perfect. I was just trying to come up with an idea for something to bake to bring into the office tomorrow and your post inspired me to look up the recipe and make the Super Charge Me cookies everyone keeps posting about. I had everything on hand for these cookies and just made a batch – so yummy. I also make little bite size cookies – as one of the students I work with said “you get to eat two without feeling guilty!” I made cherry chocolate cookies, but I’m definitely putting raspberry chocolate on the list.

    I was just thinking how I have been in the mood for some Ginger Ale. Probably haven’t had this in years but it just sounds sooo good when your tummy is ill.

    That quessadilla looks amazing. I never think to use mushrooms. I am on a mexican kick lately and really want to give this a try.

    Yes! Moe’s-style quesadillas are the BEST! I don’t know what they do, but it’s magic ;)
