Oatmeal: Finger Food Edition

I think I’ve found another way to make oatmeal a little more kid-friendly and more transportable to boot! It all started with a bunch of leftover oatmeal. How on earth would I use this up?

Then inspiration struck. I started by greasing a pan with a little bit of Earth Balance (vegan butter).

Then take tablespoonfuls of leftover oatmeal and mold them into flattened rounds.

Let cook on high heat until a golden brown crust has appeared. (It will also be when the oatmeal cakes are much easer to flip).

Minutes later you have some delicious, oatmeal finger food treats!

I also made a delicious dipping sauce with two tablespoons of almond butter, a 1/4 cup unsweetened applesauce, two tablespoons canned pumpkin, a drizzle of maple syrup and a generous sprinkling of cinnamon. (I definitely didn’t use all of this, that was just the ratio of ingredients I used).

Delicious! I’m not a mom, but if you have kids and try it with them please let me know how this goes over with them! You could also dip it into plain applesauce, maple syrup or sprinkle with brown sugar. You could also mix different fruits and flavorings into your oatmeal!

If you don’t have leftover oatmeal and want to intentionally make this, just prepare oatmeal as you normally do (I used oats, light vanilla soymilk and water) and cooked it so it wasn’t liquid and then chill in the fridge overnight.

I bet these would be great baked in the oven with a brown sugar crust, too!

    these look FABULOUS! And i love the dipping sauce.

    I have a binder of useful information for my future [ articles on marriage, ideas for holiday traditions to start with the future kids, creative ways to wrap gifts or decorate my yard, etc) and THIS is definitely getting added to the “Nutrition for the Kiddos” file :)
