What a big, beautiful, lazy Sunday! I got things done, but it was 90% on the computer, so I felt pretty lazy most of the day. I fueled with a different kind of Sunday breakfast. Instead of pancakes, muffins or some savory delight, we went with a breakfast that looked like dessert – frozen fruit and granola parfaits! Who says you need yogurt for a parfait?
For the fruit layer we simply blended frozen cherries and frozen mango, with a splash of vanilla soymilk to get a good consistency. The granola was Trader Joe’s Low Fat Vanilla Almond Granola that Melissa brought me when she visited! (P.S. Go visit Melissa and say congrats! She ran an awesome half marathon today!)
Since my day was spent mostly sedentary Ross and I just both kind of snacked through real meals today. The only “notable” snack was my attempt at homemade potato chips. We mandolin sliced a yukon gold potato and misted with EVOO and kosher salt. Apparently my oven cooks more unevenly than I even thought – some ended up raw and some ended up black! No bueno.
My random, snacky eats were avenged with a big, beautiful salad. One of the most delicious salads I’ve had in a while! The base was romaine and spinach, topped with sauteed veggies of button mushrooms, zucchini, chopped artichoke hearts and black olives cooked with balsamic vinegar, salt and pepper, crispy tofu and beets (from a can).
So amazing! I made another salad exactly the same for lunch tomorrow!
I wanted to share a link to a tofu tutorial. Emily has a great Crispy Tofu Tutorial post, and it’s exactly the same as I make it, same kind of tofu, olive oil mister and all! The only minor thing I do differently is I usually cook with garlic powder and sometimes ginger powder, too.
But y’all know of my garlic obsession.

I’ve tried making baked potato chips before with the oven and had the same problem…i guess that kinda helps us figure out how wacked out our ovens are eh?!
