Time is flying by! Not only is the weekend over and my Monday morning is flying by, but 2010 is flying by! I can’t believe we’re in February already!
I actually had both my dinner and lunch done before I had breakfast today. Backwards much?
I’m excited for dinner, it’s a new crock pot recipe I’ve come up with and I have high hopes for it!
Breakfast was a chilly smoothie!
- 1 c. frozen dark, sweet cherries
- 1 c. unsweetened vanilla almond milk
- 1 c. ice
- 4 c. (at least) fresh spinach
- 1 T. ground golden flax
- 1 T. chocolate brown rice protein powder
- 1/4 cup Trader Joe’s lowfat Vanilla Almond Granola for crunch
Lunch is ready to go, even packed up if I need to bring it to work! I made a salad identical to last night’s:
- spinach
- romaine
- sliced beets
- crispy tofu (not to be confused with fried!)
- cooked vegetables (button mushrooms, zucchini, artichoke hearts, black olives, S+P, balsamic vinegar, garlic powder)
This salad was so delicious, I can’t wait to enjoy it again! It’s certain to be a good day of easy, vegan eats all around!
On another note, did y’all make any goals for 2010? How are they going? Let’s see how my 2010 Design is going!
- Keep myself on a path to my optimal health.
- I’ve seen a doctor, gotten blood work done and have a clean bill of health! I’m making healthier choices every day, learning more about nutrition and am waiting for a package in the mail that will start a new fitness challenge for Ross and I!
- Go back to school in pursuit of a new career path (without taking out loans).
- I shared that I started classes at a community college so that I can go back to school to eventually become a Registered Dietitian! I’m actually finishing up my university application RIGHT NOW and am waiting for a couple transcripts to come in before I send it in!
- Practice yoga.
- Working on it! This is definitely going to become a much bigger part of the fitness routine really soon! You’ll see!
- Run a half marathon.*
- Haven’t done much running lately, but I have a huge fitness challenge I’m about to embark on, probably starting next Monday! It’s still a year goal though!
- Save money.
- We’re saving! Always analyzing our spending habits for new ways to cut back and save even more, too.
- Start teaching flute lessons again.
- Mmmm haven’t started this yet! Still a year plan though!
- Be proud of every post I publish on the blog and make the blog better any way I see fit.
- I am very proud of Sound Eats! I don’t think I’ve given 100% to every post though, and I know that is simply because sometimes I pressure myself to blog, period, and I just bust something out.
- Increase blog traffic.
- Mmmm let’s not talk about this. I’m pretty sure the same people have been reading my blog for the past year.
- Find a church home.
- Working on it! We’ve found a church that we like a lot, but we still probably should visit some other churches to verify our decision.
- Make friends! Our social connections in Gainesville are in a pretty sad, practically non-existent state.
- Haven’t put a great effort into this!
Well that was fun!
It’s great to see how much progress I’ve already made, and also see which areas I can start brining to focus more. How are you doing on your goals?

I can’t believe it’s already Feb!! Congrats on the RD decision… I had no idea you were planning on going back for nutrition! I’m making a back to school move soon, too, and it’s so exciting!

Increasing blog traffic is one of my goals for this year too but it’s so tough! I struggle with it. I try to comment on at least 70% of the blog posts I read but it can take me HOURS!
You’ll have to let us know how the application process goes! I was on pins and needles waiting to hear about my application to start the teaching credential program.

Great goal list! Know what I noticed first?? Your clean bill of health! Yay!! Other things are easy to work with and changes can be made and worked on and it sounds like you have great year goals to do just that. But your health is something to treasure so that’s awesome! The second thing I noticed?? The half marathon goal!! Maybe we can do the Disney Princess Half together next year!
