I almost said “Happy Humpday!” only to remember it’s Tuesday. Whoops! Today was just “off” – I think between the rainy and dreary weather, having a messed up sleep cycle, weird hormones and more, it just had “off” written all over it. I traded my morning routine in for a few more minutes of sleep, but I still found the time to make a good breakfast.
I had protein oats! In a pot on the stove I cooked 1/3 cup oats, soymilk and water with half a mashed banana and 1 tablespoon chocolate brown rice protein powder. I topped with the other half of the banana, all chopped and quartered.
After work and errands, lunch was some leftover Vegan White Chili with added cayenne and blue corn tortilla chips. I may have gone just a tiny bit overboard on the spice this time.
Once Ross got home we went on a lovely walk together. We definitely need to make this more of a routine! Going for a walk together as soon as we both get home from work is a great way to decompress from work and catch up on each other’s days while also being unplugged. This needs to become a habit!
Then there was dinner. So, I know the premise behind my blog is sharing my life one vegan meal at a time, and I try to emphasis that vegan can be easy and normal. Some nights, though, I have zero faith in myself, in recipes and how fast cooking new things really can be. I had the Chickpea Cutlets from Veganomicon on the menu for tonight, but I was *this close* to scrapping it in favor of a quick and easy stir fry. For the sake of variety and using up my chickpeas that were about to go bad, I stuck with the chickpea cutlets. SO GLAD! These were completely delicious!
I can’t share the recipe since I followed exactly, but it was on page 133 of Veganomicon and it’s worth a venture to the library to see if they have it.
It’s also totally worth the purchase of vital wheat gluten if you don’t already have some! I’ve been searching for it and I finally found it at my Super-Warmart for cheap! A (small) box of it was $1.76!
We also had frozen broccoli, steamed, and leftover homemade mashed potatoes to go with it. Simple, but great.
Have you tried the chickpea cutlets from V’con? Do you have any other favorite vegan recipes?

I need to find vital wheat gluten – what aisle is it in? I’m not even sure what it looks like!
In my normal grocery store there’s a separate organic section and I found it in there (next to the specialty flours and gluten free flours). In Super Walmart, I found it next to the yeasts and flours. It’s a small box, about 4 inches high I’d say.
Cheap, though!
I am a day ahead this week too!! Hate when that happens.

i have seen so many people make these – I like Veganomicon, but I think some of the ingredients they require (like vital wheat gluten) are not somehting i typically have on hand
Not having vital wheat gluten is exactly why this is the first time I tried this recipe in the 2-3 years I’ve had this cookbook! I didn’t have it on hand, but I heard over and over how great these cutlets were, so I went out and found the vital wheat gluten. I’m sure you can find it online, but I found it in the organic section of one grocery store and next to the yeasts and flours at Super Walmart. It’s a small box, but only $1.76. It’s worth it.
