Stinkin’ Russian

Got your attention, did I? ;) I don’t have anything against Russia or Russians, promise! We’re watching the Olympic mens skating right now, and I was really disappointed in the former gold medalist’s performance (he’s the Russian), but of course, he has so far blown away the now-second-place skater by 15 points! I loved the kid in second – he’s a 19-year-old French kid, and did phenomenal for his Olympic debut! But what do I know, I just get happy to not fall if I have skates on. ;)

Today’s lunch was such a delicious salad! I had a bed of organic baby spinach topped with tofu, bean sprouts, salsa and 50 calories worth of guacamole from Wholly Guacamole – review coming this week!

I also enjoyed a slice of millet bread, plain. I thawed it out and instantly recognized why Ryan thought it seemed so custard and almost egg-like! It’s so doughy and almost creamy! Such a delicious bread, can’t believe it’s gluten-free!

Throughout the afternoon and before our late (8:00 – ugh!) dinner, I also snacked on a Ryvita cracker crispbread and a Chocolate Brownie Z-bar.

Today’s workout was Plyometrics from P90X. Good, but I stopped a little early because I think I over extended (or something) my left leg and it hurt pretty bad.  After limping around for a bit, I stretched, massaged, took a hot shower (which I know – hot and cold works best, but I don’t have the heat on in the house!), and am still stretching. It’s feeling better already! So glad I cut a few minutes out instead of aggravating it further.

Dinner was so delicious, and really pretty fast to make!

  • 1 cup sweet brown rice
  • 2 cups vegetable broth (or water – I had the stock open and needing to be used in my fridge)

Once the rice is done cooking add the following add ins:

  • 1 cup shelled edamame
  • 1 cup chopped pineapple (and it’s juice!)
  • 1/2 cup raw cashews
  • 1 Tablespoon reduced sodium soy sauce
  • 1 teaspoon dried ginger
  • 1/2 teaspoon garlic powder
  • 1/4 cup cilantro leaves
  • drizzle of agave to taste (optional – I needed something to tone down a bit of the ginger!)

I can’t wait for leftovers tomorrow!

I’m also pretty sure some banana-cherry soft serve will be in my future! The addition of frozen cherries to banana soft serve is AMAZING! Try it! Ross makes it the best – I have no idea the ratio he uses!

I have decided that I’m going to try to give up refined sugar/ added sugars for Lent. The definition of “sugar” is kind of a grey area, but I’m ok with fruits (obviously!) and sugars like agave in moderation. It’s mainly the “cookie” and “chocolate chip” sugar I want to cut out. I foresee many more nights of banana-cherry soft serve over the next 40 days. ;)

Off to watch the Olympics some more! What’s your favorite thing to watch? I love speed skating (yes, I’m totally following Apolo Ohno oh twitter) and honestly, pretty much everything. Although I have to say – the figure skating scoring always throws me for a loop! Sometimes it seems so biased, but like I said – all I know about skating is to stay off my butt. ;)

    I thought you were talking about my neighbor-they are always cooking some funkalicious food next door!

    I will be scouring your page for recipes on meatless stuff btw. I decided to give up red meat, chicken and pork for Lent and my cooking without meats is very limited.

    It’s hard at first to give up sugar…but it’s one of the best things that you can do. Stevia and xyltiol are great subs.

    My favorite sports to watch are speed skating and snowboard cross. I’ve never tried either, but they look like fun

    both the salad and the rice look awesome, especially the rice of which i love you put in pineapples and nut. flavorful with great texture.

    What brand of millet bread did you have? I am gluten-free and always on the lookout for new bread! :)

      It’s a fruit sweetened millet bread (gluten and wheat free) by Food for Life (same brand that makes all the Ezekiel breads). Love it! I found it at a local health store – I’m sure places like Whole Foods would have it too.
