Gooooooddd morning!
I slept like a rock last night! I will say this – I think P90X has been ensuring both Ross and I get some solid sleep lately!
Breakfast this morning was delicious! (Actually it still is – I’m eating as we speak
).
I had a pumpkin parfait, all dressed up in a big ol’ wine glass. In my oats I combined:
- 1/3 cup old fashioned oats
- 3/4 cup unsweetened vanilla almond breeze
- LOTS of cinnamon!
- 1 Tablespoon ground flax
- 1/2 cup pumpkin puree
- 1 Tablespoon almond butter
After they cooked on the stove I alternated layers of the pumpkin oats and a chopped banana. I used to add a drizzle of maple syrup when I made pumpkin oats, but in light of no refined sugars and reducing added sugars for lent, I went with the banana. I have to say – it’s a great alternative and the sweet, creamy banana goes perfectly with the pumpkin flavored oats!
Lunch today will be leftovers from last night’s brown rice, edamame, pineapple, cilantro and cashew dish. It was so delicious, I can’t wait to enjoy it again! Don’t mind the recycled photograph – it’s better than a photo of a tupperware container.
I’m looking forward to a fun evening later! More P90X and more Olympics! I stayed up late to watch Evan Lysacek last night and I’m so glad I did! His performance was beautiful, I love Stravinsky’s Firebird Suite that he skated to, and I loved his costume! Did you know Vera Wang designed it? I sure noticed the feathers! (Thanks, Today Show, for supplying me with that tidbit of information).
There are some big players coming out tonight – Shaun White, Lindsey Vonn, Apolo Ohno and more! Who are you most looking forward to watching, or could you care less? I’m looking forward to seeing all three!
If you could care less about the Olympics – are you giving up anything for Lent? I talked about it yesterday, but I’m making an effort to give up refined sugars and added sugars. There are many reasons I’m doing this, and I’m fully expecting it to be a challenge at first, but that’s what Lent is all about, isn’t it? Sacrifice.

Your edamame dish looks *very* tasty! I think it’s just the inspiration that I need for tonight’s dinner! You’ve also inspired me to pull out the P90x plyo and try it again (in a couple week, after my race…) – I got mine for free so I haven’t really explored it much, but what I did I loved!

What a fun idea with the pumpkin parfait. Banana and pumpkin go so well together in oatmeal!
Alcohol. It’ll definitely prove to be a challenge at times. I don’t drink a lot but I almost always have a couple glasses of wine during weekend dinners and when I’m out with friends. Good luck giving up sugars! That’s a good one, too!
I am also looking forward to watching all three, but probably mostly Apolo Ohno…love that speed skating! Of course, we’ll have to go back and forth between the Olympics and Idol for an hour
