Studiously Snackalicious Sunday

Howdy hey! Today revolved around the letter “S”, with a seriously, studiously, snackalicious theme.

I’ve noticed that on weekends Ross and I tend to snack our way through the days starting with a light breakfast (like a small mug of flax flake cereal with almond milk for me today) and ending with a lighter dinner. Usually the overall net intake for the day ends up being lower, which is totally fine since Sundays are our rest days. Today was no exception! By far the best snack of the day (I suppose you could call it our lunch, since it was rather substantial) was my latest VitaMix creation! I have no idea what to call it, besides a Super Health Nut Chocolate Shake!

For 2 servings:

  • 2 cups unsweetened vanilla almond milk (or any other milk substitute)
  • 1.5 cups frozen cherries (hello antioxidants!)
  • 1 cup frozen mango
  • 2 Tablespoons chocolate brown rice protein powder (hello protein!)
  • 2 Tablespoons unsweetened cocoa or cacao powder (hello chocolate goodness!)
  • 1/4 raw, unsalted sunflower seeds (hello iron!)
  • 4 cups spinach (hello green!)
  • ice
  • OPTIONAL: raw agave (1 teaspoon – 1/2 Tablespoon per serving)

SO delicious! Ever make a milkshake with chocolate chips blended into it, which gives it a kind of chunky texture? That’s exactly what the sunflower seeds do! It’s like a vegan, health nut version of a double chocolate chip milkshake!

I’m going to try adding sunflower seeds to salads, roasted veggies, smoothies, etc. this week because I’ve been feeling rather fatigued (read: slept about 10 hours last night then took another 2 hour nap later this morning). Sunflower seeds have a decent amount of iron to them, so I’m hoping by trying to incorporate them into my diet more that some of my presumed iron issues may be helped!

Note on sweetness: these shakes are good with a good chocolate flavor on their own, but if you want them a little sweeter like Ross did, add a drizzle of raw agave. Ross re-blended his with some and I have to say that it tasted great and the agave definitely brought out the chocolate flavor even more!

Besides snacking, shakes, and sunflower seeds, there were also shoots! Photo shoots to be exact. :)

All the studying definitely paid off though, because I got a grade I was very proud of on my exam I took tonight (online class)! I loved that three or four questions were relating to vegetarian and vegan issues. Totally rocked those!

Since I was busy reading away and Ross needed to take a break from his work, he ran to Moe’s to pick up dinner. Any Moe’s reps out there? Y’all should seriously hire me and pay me with how much face time I give y’all on Sound Eats. ;) Ask Julie – she went to Moe’s after seeing it here in SE-land!

I got my standard tonight of the Big Moo (aka Joey Junior) sans tortilla. It had rice, black beans, lettuce, tomatoes, guacamole, cilantro, cucumbers, black olives and some lime I squeezed on it once I brought it home. (They usually have lime wedges by the beers if you’re in the store). Love it!

This salad-esque meal was the perfect topper to an S-themed day. :)

    That smoothie looks great! I add pumpkin seeds and chia seeds to my smoothies for iron. The pumpkin seeds give it that great “cookie crunch” texture and the chia seeds make it creamy.

    I love laid back weekends when there really is no logical reason to get out of your pj’s! You and Ross look so comfy and happy! :)

    I need to try Moes. How do you think is compares to Chipotle?

      I like them both, but Moe’s is probably our #1. It’s tasty, it’s cheaper! Plus if you feel snacky for chips and salsa, it’s free at Moe’s. :)

      I do like Chipotle though, and even though I don’t consume meat, I have to commend them and their choices for where they get their meat from!

    I feel fatigued if I sleep more then 8 1/2 hours! I read an article recently, I will have to try and find it but you can have too much sleep at a time. I know when I oversleep all I want is a nap too! Just letting you know it may not just be an iron deficiency! :)

      Aw thanks love! You could be right, that has happened to me too, but this iron thing is something I’ve had a hunch on for quite a while actually. Plus, I know as a vegan, iron is one of those nutrients that I have to make sure I get enough of.

    I love Moe’s, but I can’t find one in DC. We do have California Tortilla, though, which is bangin! If you’re a hot sauce lover, they have every kind imaginable, even the amazing habanero hot sauce I got in Belize! Check it out!

    Moe’s always looks so good on your blog but I’ve never been happy with it when I’ve tried it. Like it doesn’t even look as good as yours. :(

    You are probably also tired from all the PX90 workouts since you are pushing yourself to your physical limits! Your body’s probably like “holy crap…let me rest!” :)

    Oh my goodness, I just made a modified version of your chocolate health nut shake- SO GOOD!

    Mine was:
    1/2 cup soymilk
    1/2 cup water
    1 banana
    1 tablespoon chocolate soy protein powder
    1 tablespoon cocoa powder
    lots of spinach
    ice

    You are a genius! I would love to add frozen cherries to it, but I didn’t have any frozen fruit. This may be my “dessert” every night for the rest of my life.
