Mehhh Mondays. That’s how I feel about this lovely day of the week, but hey – it’s almost over.
Today seemed nonstop: getting up, getting some work done, P90X, prepping dinner and lunch, Ab Ripper X, shower, post office, work work work work work, home, dinner, crash hard.
Note to self: high heels, even if they are the ones you can easily walk in, are a BAD idea for Mondays! I was on my feet about four hours total, including setting up and tearing down the clinic. The exhaustion from the heels may or may not be contributing to the "crash hard" component of today’s schedule.
Lunch was delicious, and a perfect example of how a well-stocked kitchen can give you a nutrient-packed vegan lunch. I roasted sweet potato fries rubbed with olive oil, sea salt, cinnamon, garlic powder and chili powder for 30 minutes at 350 degrees and 20 minutes at 400 degrees. Deliciously creamy sweet potato pockets were the result!
I also threw together a salad with butter lettuce (that I bought simply because of the beautiful bright green color and cheap sale price), alfalfa sprouts, roasted red pepper hummus, a quarter of an avocado, tofu and half a lime for juice for "dressing".
Note to my Florida/ Publix friends: the Publix deli hummus that I adore is buy one get one free this week!
Work was crazy. Good, but tiring, busy, nonstop, motivating, heartbreaking, fulfilling and more. I am so thankful that I can feel my heart expanding and changing and making me into a better person through my job.
I’m also thankful that I had dinner ready when I walked in the door! Crock pot soup! I threw in my favorite 7 Bean & Barley soup mix, but since we were low I also added more split peas, barley and dried chickpeas. Add plenty of liquid, some salsa and some spices and put the crock pot on low and voila! Dinner is ready when you walk in the door at 8:00 PM.
So thankful for my crock pot!
Time to try to cram a few more things into my day before it’s over! Why do I feel so hectic?!
