Chocolate Shakes for Breakfast?!

Today’s breakfast was so delicious. I had a chocolate shake! Remember that Super Health Nut Chocolate Shake I made on Sunday?

I pretty much made the same thing for breakfast today! 1.5 cups frozen cherries, 1 T. brown rice protein powder, 1 T. cocoa powder, mucho spinach, 1 c. unsweetened almond milk, 2 T. raw sunflower seeds and general deliciousness. :)

I would be one happy lady if I could have this for breakfast, lunch, or dinner every day of the week. :D

Lunch was a Ryvita crispbread cracker with hummus along with some leftover crock pot soup:

Dinner was exceptionally simple and delicious. I kind of thought of it as a nutritionally-amped up classic rice and beans. Instead of rice I used the protein powerhouse quinoa and I added plenty of vegetables to the beans!

Never forget to rinse your quinoa! It gets rid of a bitter coating.

I cooked one cup quinoa with two cups water and some garlic powder, cumin, chili powder and sea salt. While the quinoa was cooking I sautéed some red bell pepper, a small zucchini, 2 shallots and 3 garlic cloves in a half tablespoon of olive oil. I added a can of black beans (liquid and all – Ross’ idea to make it more sauce-like). I also threw in some frozen spinach to add a few more nutrients. I love keeping a bag of chopped frozen spinach (I have Publix brand) in spinach just for this reason! Easy nutrient add in!

Season with chili powder, garlic powder, cumin and lemon juice and voila! You have an easy dinner that’s not too shabby from a nutrition standpoint. :)

    Man, I really need to try that chocolate shake, yum! I also have never had quinoa, at least not at home. That is nuts ;-)
