Good, Sound Eats

Hey friends! Hope your weekend-ing is going well. :) We had grand plans for outdoor adventures this morning but with the rain and drear we stayed inside. I suppose it’s another relaxing day in for the Sound Eats household!

There’s been some pretty great eats around here since I last saw you, though. Check it out!

One of my favorite comfort meals: savory oats. Yesterday’s combination held a baby zucchini, 50 calories worth of tofu, some tomato, half a red bell pepper, 1/3 cup (100 calories) of oats, garlic powder, oregano and kosher salt with a serving of vegan mozzarella cheese (Vegan Gourmet brand) and a tablespoon of hummus to make it all delicious creamy.

Ross’ vote won the "what’s for dinner?" question of the night last night with these delicious calzones! Since we decided rather late we just walked next door to pick up some semolina dough from Publix. My calzone was filled with roasted red pepper hummus, mushrooms, black olives, spinach, some crumbled tofu and some more vegan cheeze. With the mandatory marinara served on the side for dipping and drizzling into our calzones!

Calzones are a perfect application for vegan cheese – do you see that hunk of melty goodness in there? Delicious!

Due to our filling dinner I wasn’t too hungry this morning, so we ended up having a "brunch" of sorts after Ross woke up. We made bagel sandwiches with French Meadow Bakery Hemp Bagels. Mine had hummus, tomato, avocado, spinach, dijon mustard and some vegan cheeze (which I melted in the microwave). Look at that sandwich! Tell me what carnivore in their right mind would turn this beautiful bagel-wich down!?

On the side we also had some crazy sweet and juicy fresh pineapple.

Is pineapple an amazing fruit or what? When you get it ripe, there’s just nothing that tops its sweetness!

    Looks so good!! Where do you get your olives already sliced like that? Also, I am sure you’ve explained many times so I feel like an ass asking, but what exactly is vegan cheese and where do you get it?

      Hahaha no worries on the vegan cheese. This particular kind was soy based, but I have seen almond and cashew-based cheeses,although I’m not sure they’re all vegan. This brand I used was Vegan Gourmet. A lot of soy cheeses will still have casein (milk protein) in them. There’s a newer type of vegan cheese, daiya vegan cheese that I’d love to try but isn’t by me yet. Maybe in NYC by you?

      Also – those black olives I sliced myself, but I feel like I’ve seen canned sliced olives before? Right by regular olives?

    what a great mix for your savory oats! i love the hummus in there! Can I suggest, maybe guac or plain avocado for the next one! i bet that would be awesome!!!

    I need to request that my Publix start carrying pre-made dough like this! Your calzone came out beautifully, as did the bagel sandwich. I agree, there is nothing as good as a juicy sweet pineapple. :)

      definitely! And request that they offer the whole wheat/ whole grain dough too – that one is SO good, but they didn’t have it that night. It has wonderful grains and sunflower seeds in it – so chewy and delicious!
