Good morning!
Since Ross’ birthday is on Wednesday and we’ll be in Orlando next weekend, I decided today was the perfect morning to make a nice breakfast for him. We used to make nicer breakfasts on the weekends all the time, with waffles, pancakes, muffins, omelets, frittatas, Canadian bacon and more. Since going vegan though, the nice weekend savory breakfasts have been all but nixed (a tofu scramble and frittata is on my must-make list though!) and we’ve cut down a lot on baked goods. Today was a nice change though, and the recipe I used was so easy!
I used a simple recipe for Easy, Basic Waffles that made pretty awesome vegan waffles. I will guarantee you that you have all the ingredients in your fridge right now! The only changes I made was that I used whole wheat pastry flour for my flour, unsweetened almond milk instead of soymilk, and I added a half teaspoon of vanilla extract.
Our waffle maker is a little on the older side, so it doesn’t always make the best waffles. We have to take the waffles and then put them in the toaster so they get crispy (which explains why our waffles have curves, since they sink down into the toaster and get crispy that way).
Instead of drowning our waffles in maple syrup I opted to make a quick fruit-based topping I used to make all the time! I simple spooned some Polaner fruit-sweetened apricot spread into a skillet with some sliced fresh strawberries and a dash of vanilla. It’s so delicious! This would also make a quick and easy topping for shortbread, fruit tarts, etc.
Delicious, wholesome breakfast! Ross loved it too, he even went back to polish off the last two waffles (recipe makes about six).
Now, I need your help!
I’ve been exploring different options for the site design for the Healthy Living Blogs Database I’m working on, and I’m also looking into giving Sound Eats a face lift. There are two themes that I’ve been looking into a lot, and I want your input (especially if you use either of these themes!).
My dilemma is the Headway Theme versus the Thesis Theme.
I’ve heard great things about both and know bloggers and have seen blogs that utilize both themes. Headway seems to have an awesome user-friendly navigation, where you can even drag and drop boxes, tabs, and more. Thesis has been around longer, and also has a great, straight-forward dashboard for all design features. They both are great for SEO, although I have heard that Thesis has withstood the proverbial SEO test of time since it has been around longer and has more than proven itself. They are both the same price, however with Headway you can use the Personal Option on two sites (which I have) and with Thesis I would need to buy one for each site. They both have equal affiliate programs. I’m also trying not to get too caught up on price, because I’m sure between the affiliate program, extra hits, and the money I make off the HLB database (which is going to cover costs such as these, in addition to the time I am and will be pouring into it), the costs will be covered.
So – do you use either of these themes? If you do or don’t, what’s your input on which reigns supreme/ which you would choose?

I use blogger so I’m probably not any help on the design part.
But I had to say, our waffle maker is the EXACT same way. We always have to toast our waffles afterwards.

I use Thesis. Can’t speak about Headway because I don’t use it. I love the theme and it’s custom features. But there was still a learning curve for me. Luckily, between the Forum, the support desk, and the hundreds of tutorials out there… bit by bit my sites are getting customized.
