Vegan Hamburger Helper

It’s a beautiful time of the week. Thursday night work is over and I have that, "I can’t move my lower extremities" feeling that lets me know I worked hard and can now enjoy the weekend (of course after I get through my "get things done Friday" routine tomorrow!).

Lunch was deliciously fresh and green. I had a salad with a base of mixed organic greens that I topped with yesterday’s leftover Cannellini Bean, Basil and Tomato Bruschetta.

Dinner tonight was 100% inspired from my sweet friend, one of my favorite vegans and one of the most health-conscious individuals I know: Ryan!

She recently posted a "Vegan Hamburger Helper" meal that she claimed was tasty, perfect comfort food and great for when you’re short on time. That sure fit my bill of requirements for dinner tonight!

Luckily I had one staple for this meal in my pantry: Road’s End Organics Dairy Free Mac & Cheese. Yes, you’re seeing this correctly – a boxed vegan mac and cheese! With whole wheat noodles, none the less!

The other staple for this meal I didn’t have, but was very easily able to pick up at Ward’s yesterday (you should be able to find Sunshine Burgers in most health food stores, and maybe even in your favorite grocery chain).

Can we pause a minute and just look at these ingredients?! I am in LOVE with the short ingredient list!

Cook the macaroni and heat the burger according to directions (I did need to add more plain almond milk than the quarter cup stated – I wanted a little more sauce). In addition to crumbling two Sunshine Burgers into the finished macaroni, I also threw in some torn fresh spinach.

Thanks for the great dinner inspiration, Ryan! It was simple and quick – perfect for tonight. :)

I am SO excited for this weekend. We’re headed to Orlando to celebrate Ross’ birthday with his family, but I also get to hang out with some awesome friends and fellow bloggers! Saturday’s plans include $5 community yoga with Ryan (and whoever else wants to join!) and a blogger lunch at Pizza Fusion where over 20 of us will be munching and mingling away! Can’t wait! :)

    I realllllly want to go to yoga, since it is exercise I can actually do! But I don’t know how I’d get there :(

    probably not a bad thing that i’ve never had hamburger helper in my entire life. just like i’ve never had boxed mac and cheese. i bet your meal tasted great though!!!
