Today was one of the most joyful Mondays I’ve had in a while, with some excellent fresh eats! I had a productive morning with a great workout, great eats, and just a great attitude.
Today was day 29/90 for P90X and it was also the start of Phase 2. It brought another new workout (Shoulders, Chest and Triceps) along with the good ol’ Ab Ripper X and whooo baby! My muscles burned! I love it.
Pre-workout I made a small oatmeal ball. I used a scant quarter cup of oatmeal with a quarter cup each almond milk and water. I topped it with cinnamon, a super tiny sprinkle of cacao bliss, some raw pumpkin seeds, some raw sunflower seeds, and two sliced strawberries. The oats got a little thick so I drizzled a little more almond milk around it. Perfect fuel!
After the workout I broke out my juicer (I have a Breville Compact Juicer) and tried my hand at a juice that Caitlin had at Whole Foods on Saturday. I juiced two small oranges, three carrots, one small piece of ginger and one garlic clove. It was surprisingly very tasty and well-rounded in flavors! Who would’ve thought garlic would actually be enjoyable in a juice?! ![]()
I also whipped up my new favorite "stir fry". I cooked up some tofu (let it get crispy in a half teaspoon-teaspoon of olive oil) and some sliced baby bella mushrooms with some garlic powder and kosher salt. Once they were cooked I added a half cup of tomato sauce and then threw it all over some fresh spinach and topped with some basil. Love it!
At work I had about half this Tropical Fruit Tart Larabar, which I think I have finally decided is in my number two favorite Larabar spot. It’s a very close second though, right behind the Coconut Cream Pie Larabar! Mmm!
Ross was awesome and made our dinner salads tonight! Mexican/ taco salads! He combined spinach and a couple different kinds of lettuce for the base and topped it with salsa, avocado, tortilla chips and fat free refried beans. This is definitely one of our favorite salad combos!
I’m thinking a square of dark chocolate is in my future.
What are your favorite salads combinations? I like the above Mexican salad, any salad with fresh fruit, and the Milton Special salad at Infusion Tea in Orlando (it has hummus, tabbouleh, greens, beets, cucumber, tomato, sunflower seeds and the most divine reduced balsamic dressing).


Your salad does look delish! My favorite salad hands down is also any take on a mexican salad. Something about the corn/salsa combo (and maybe a scoop of guac) that takes it over the edge!
My favorite, but one I always seem to forget about, is mixed greens, pear, walnuts, and blue cheese. It’s really the fresh fruit in salad combo that I love. My most common salad though is spinach and apple. I think I could probably eat that every day without getting tired of it.
My favorite salad is a spin on a Mediterranean salad. I mix half romaine, half baby spinach and top it to death with tomatoes, cucumbers, black olives, beets, sunflower seeds, red pepper tampenade, a dollop of hummus, and a drizzle of olive oil with fresh ground pepper and oregano. Yumm!
that sounds AMAZING! I’m a sucker for anything with hummus.
That oatmeal ball looks amazing and I will definitely be trying one soon, however I think I might have to attempt it with raspberries instead as they are my favorite. Unfortunately all of my favorite salads include ranch dressing, I am attempting to acquire the taste to some healthier dressings but its a slow process.
Mmm raspberries are delicious! I just picked up some organic blueberries on sale and I’m looking forward to using them in oatmeal soon!
Try using other things to flavor your salads besides creamy dressings. For a healthier “creamy” dressing try some thinned out hummus. I love topping salads with citrus (lime juice is my favorite, and fresh squeezed orange is good too), salsa, hummus, avocado, raw nuts, dried unsweetened fruit and more. Just add lots of flavors and textures to keep your tongue interested and happy and you won’t miss the ranch dressing.
