POM, Wonderful POM

Good morning! Nothing exciting to report from yesterday besides this beautiful pizza!

Instead of ordering pizza from the place down the block, we took the budget (and I’m sure health!) friendly approach by picking up some Whole Wheat Multigrain Dough from Publix. We topped it with tomato sauce, garlic powder, oregano, half vegan cheeze/ half mozzarella, plum tomatoes and mushrooms. So simple and so delicious. Plus I actually shaped a perfectly round pizza crust!! (Um, I’m usually a more "rustic" pizza dough shaper.)

We spent the evening have a movie night with the two of us, which was quite fun. We hit up the cheesy move night with "Did You Hear About the Morgans?" (cute, funny, cheesy, romantic, relatable, recommended!) and "Alvin and the Chipmunks: the Squeakquel" (like I said – cheesy movie night!).

This morning I made a delicious fried egg sandwich. I took a slice of whole wheat whole grain bread, toasted it on a griddle with a little Smart Balance and added spinach, garlic hummus and a single sunny side up egg. Delicious!

POM Wonderful recently sent me some more of their pomegranate juice that I adore. Pomegranates are one of my favorite fruits, flavors, scents and more. I adore POM Wonderful juice and the POM Wonderful company. They are such an awesome company that I truly love! I’ve never had a bad experience with them. :)

The only thing about pomegranate juice, though, is that it’s really strong! I love using it more for marinades, sauces, and as beverage components. Today Ross and I split an 8 ounce bottle of POM and added some club soda. Love it!

 DSC_0777 Other favorite POM uses?

  • Making a reduction of 1/4 cup POM juice, 1/4 cup balsamic vinager and a Tablespoon of agave to create a balsamic pomegranate glaze to drizzle over salads. (To reduce, simply combine everything in a saucepan over low heat until it reduces to half its volume).
  • Splashing it in unsweetened green tea.
  • In baked goods!
  • Marinades for meat (Pomegranate Salmon is coming up within the next few days in our weekly menu!).

    That pizza looks yummy. :) My fav pizza toppings… definitely PINEAPPLE and veggies! Olives are mandatory, always. Pepper’s also great!

    I actually though this looked like a professional pizza!! My DIY pizzas tend to turn out oblong or rectangle shaped ;)

    Egg sammies & pom drinks are SO satisfying! We also choose to make our own pizza, although there is nothing like someone else making you dinner once in a while. Plus I love tons of cheese :)

    I recently took some POM wonderful and added some vodka to mix. Deliciously good! BTW, the pizza looks very amazing and I tend to take the more frugual and healthy way on a lot of my foods lately.
