Southwestern Egg White Quiche

We all have those days where we just seem to be in a funk the whole day, whether it be from emotional things, the weather, stress, allergies and more. Today was kind of all of the above for me, and all I’ve wanted is some good ol’ comfort food.

I had just got done with a sweat-inducing, heart-pumping elliptical session though, so I didn’t want to negate my exercise (and more than likely induce a tummy ache) with nutritionally devoid creamy, carby stuff. Enter my current favorite comfort food: quiche! Tonight’s recipe was so delicious, and actually full of protein and veggies, making it very light and delicious!

Note: I used a pie crust in tonight’s recipe, but wasn’t a fan, so that’s up to you.

Southwestern Egg White Quiche

  • 1 pie shell (unbaked)
  • 1/2 pound ground chicken (as lean, hormone-free, antibiotic-free, organic, etc. as you can find it)
  • juice from half a lime
  • 6 egg whites
  • 1/2 cup salsa
  • 2-3 cups spinach
  • 1/4 cup nutritional yeast
  • hot sauce and black pepper to taste
  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Brown your ground chicken in skillet over medium-high heat with the juice from half a lime and some black pepper and hot sauce.
  3. While the chicken is browning, prepare the egg white and veggie mixture. You can chop and whisk this up on your own, but I just threw the egg whites, salsa, spinach and nutritional yeast into my VitaMix and blended on the lowest speed until the spinach resembled coarsely chopped spinach (about 30 seconds).
  4. Line the bottom of the pie shell with the ground chicken and then pour the egg and veggie mixture over top.
  5. Bake for thirty minutes, or until the quiche is firm.
  6. Let rest ten minutes before serving, then plate up and enjoy! :)

This was so good, and I’m 99% sure I’ll be having this for breakfast tomorrow morning, too. Hey, why not? :)

  • I have the best husband. Pretty sure he just made cookies. What better way to put a positive spin on the end of a funky day? :)
  • I love Glee. Much to my husband’s chagrin, I will now be singing Glee-ified Madonna songs for at least the next 24 hours, straight.
  • Fortunately for my husband, I have a degree in music and a good ear so I won’t be as pitchy as some of the Idol contestants. ;)

    quiche is SO good! i love how spinach fluffs up eggs to make it extra hearty :) tomorrow is a new day! and hopefully the weather is less muggy/rainy

    I love quiche and this recipe would be so easy to make! Sub in some faux sausage and it would be great :)

    I had one of those days yesterday!!! All I wanted was cereal and ice cream! :)

    But I think you had a much more commendable approach with your delicious looking quiche! :) Wish I would have thought of this before I pulled out the Coconut Bliss! ;)
