My distaste for leftovers has been documented before, but this is another way I trick myself into using up leftovers in a new way.
I just took all similarly themed ingredients in my fridge and combined them all into one easy casserole (bleh, that word grosses me out). Perfectly easy and made in advance, so that I could pop it into the oven as soon as I got home from yoga last night. And my oh my, it was tastier than I thought it’d be!
Leftover yellow rice to start…we made some for some Mexican salads the other night and the package made a ton!
Leftovers from the Mexican salads (rice, black beans, tomatoes – I picked out the lettuce to make sure it wouldn’t get soggy).
Half a lime – lime always works with Mexican flavors!
Big spoonful of fat free Greek yogurt for some extra creaminess and protein.
Seasonings: chili powder and garlic powder. Adding a little extra seasoning like this is a great way to make any dish taste more homemade, and if you’re combining lots of leftovers like this, extra seasoning tends to make everything more cohesive.
Put in a baking dish, cover and throw in the fridge. Go get your sweat on and get blissed out at yoga, return home and throw the dish in the oven! Sip on a delicious coconut water with a splash of pineapple while you wait.
I heated the dish through, then when Ross came home from the store with some cheese, I topped the dish with the cheese and popped it back under the broiler for a couple minutes.
Voila! Served with kale chips seasoned with olive oil, nutritional yeast, garlic powder, chili powder and kosher salt. I accidentally ate them all before Ross came home from the store. Oops. I don’t think he minded. In fact, I’m pretty sure he was relieved I did.
And with that, I now have more leftovers in my fridge, but this time I’m looking forward to eating them for fast meals.

Oh yes. Breakfast or dessert, you ask? Breakfast.
Healthy too – oats, almond milk, banana, cocoa powder, almond butter, protein powder, chia seeds. All vegan, no added sugars, balanced and just generally awesome.
Off to go paint some picture frames while I wait for some dudes to come tear apart our bathroom walls to fix our toilets. They flush hot water. AKA they’re jacking up my utility bill and it needs to stop stat. Exciting stuff. My life is all thrills around here folks.

The word “casserole” just sounds super unhealthy. It makes me think of velveeta for some reason. But, I do love me some casseroles though
