Pizza Frittata

I was all set to share another post with y’all tonight, but time just got away from me! Totally the fault of HealthyLivingBlogs.com – I add one blog to the spreadsheet and two more emails from bloggers wanting to be added pop up in my inbox. So awesome!!! Thank you guys! Now, in the meantime I have to share this painless dinner with you guys. It’s budget-friendly, waistline-friendly and tastebud-friendly!

When I was stalking Whole Foods for the new Larabar flavors the other day, I picked up this log of goat cheese. At 11 ounces, it’s huge – about double what most little logs of goat cheese contain. The price though? $4.99. I’ve seen goat cheese half that size for a higher price! If you need goat cheese, get yourself to Whole Foods!

So, like I said, I’ve been a crazy lady with HLB lately, so I needed something fast that wouldn’t have me gone from my spreadsheet too long. (Good gosh, did I just say that? Never thought I would’ve seen THAT come out of my mouth! er, keyboard.) Enter: frittatas. This one was easy with seven egg whites (seven because I was going to do six, but didn’t want to leave the one little egg by its lonesome), three chopped plum tomatoes and the last of a bag of frozen chopped spinach, thawed and drained (about 1 packed cup).

I also whisked some salt, pepper and garlic powder into the egg mixture and topped the whole thing with my beautiful goat cheese and loads of dried oregano. Speaking of, I smelled this beautiful variety of a Cuban Oregano at the market last weekend – lovely! I knew I should’ve bought it!

Bake away for 20 minutes at 400 degrees (P.S. make sure you sprayed your tart pan before pouring the eggs in!) and ta-da!

So. good. With the tomato, spinach, cheesy, garlic, oregano-y (yes, I totally just turned an herb to an adjective, go with me here) flavors, it tasted just like a Pizza Frittata!

Ross also made a whole wheat corn bread to go with it. Perfect pair + totally amazing!

    Pizza frittata?! Wow. This looks amazing, girl. I’m not normally one for eggs . . . but I will HAVE to try this out. It looks super delicious <3

      It was super delicious (both hubs and I went for the leftovers, which is the #1 sign of a good meal around here!) and it was EASY, too! Plus, easily customized for whatever veg/ cheese/ spices you have on hand. :)

    Looks delish! I like your tag-team dinner! As far as fast meals go, we all really like tacos/taco salads/fajitas. They are easy to make veggie, quick to throw together, and tons of different ways to fix them with just about anything you have laying around. Or how about the crockpot?? I don’t use mine often, but with our upcoming school and sports schedules I will probably be using it TONS! I’ll let you know when I come across recipe keepers.

    I want to thank you again for all your super hard work on HLB. You have put so much into it and your time and effort is obvious and much appreciated. I made a donation the other day through paypal, I hope more people are doing the same to try and help out…I’m sure you have tons invested and I know it isn’t cheap.

      Aw thank you! Your donation and your comment here really means a lot. lol I don’t think even I realize how much time I’ve been putting into it! This is why I’m on mission: iPhone, because I don’t know HOW I’ll keep up with HLB when I’m on campus 8-5 most days + trying to get a PAYING job too. ay ay ay!

      And definitely let me know if keeper crock pot recipes – I’m definitely going to be breaking mine out frequently!

    Lately, I’ve been trying to do a ton of prep work on Sundays – cooking something in the crockpot (crockpot lasagna, BBQ pork, chicken for enchiladas/etc) and prepping all our lunch stuff for the week – carrots/chips/etc and then during the week all we have to do is make sandwiches for lunch, and heat/eat dinner!

    I can’t believe how cheaply you got that goat cheese…I must check WF for that!

    We love frittatas as well but another fast easy favorite is paninis like this one: http://www.thesweetslife.com/2010/06/jam-proscuitto-panini-with-walnuts.html. Ah I’m drooling just remembering :)

    looks great! i was at whole foods over the weekend (we don’t have one here, so i just get to go on vacation) and saw a block of gouda for $115!! gouda’s expensive everywhere but that was crazy… glad goat cheese is more reasonable!

    This looks SO good!! I love frittatas but I’ve never actually made one myself. Crazy eh?
    Im also completely obsessed with goat cheese. I take a special trip to Costco every couple weeks just because they sell a monster log of it super cheap!

    First, thanks for all your hard work on HLB! I think it’s going to be such a great resource. I’m sure it’s incredibly overwhelming right now, but I know other bloggers (myself included) appreciate all that you’re doing.

    And just want to say that I love frittatas as quick and easy meal! I’ve been doing a lot to get my own site up and running and dinner has been more of an afterthought. This is perfect!

    Love the recipe. I’m always in search of new ways to make a Frittata. It’s one of the best fall back meals I know.
