Last week I was on a bit of a detox of sorts. Not the kind of detox where you only drink lemon-cayenne-maple syrup-water in order to drop five pounds by Sunday, but the kind of detox where I was trying to give my body a break since my hormones had become seriously messed up…again. So, no gluten, no cow’s dairy, no alcohol, no caffeine, no sugar (well, fruit didn’t count), etc. Let me tell ya…I picked a really rotten week to try no caffeine, given that I had school and work every day last week, and I had two huge exams. Yeah…not smart.
Well, when the last of my exams were over on Friday and I was done for the week, the only thing I wanted was to do was kick back with a glass of wine, a Mellow Mushroom Mega Veggie Vegan Cheese Pizza…and maybe a chocolate chip cookie for dessert. Needless to say, none of the above were in the picture.
So instead, I got creative with a serving of allotted grains. Let me preface this recipe by saying if you are looking for a “real” pizza – this is not it. This is Big Papa John’s health freak cousin, so many times removed you wonder if they’re really related. But, for who the cousin is, he’s still a good person.
Detox Pizza (yields one personal pizza)
- a heaping 1/4 cup raw buckwheat groats
- 1 egg
- In a coffee grinder, grind the raw buckwheat groats until they’re the consistency of flour. In a separate bowl, combine the buckwheat flour with an egg. On a greased cookie sheet, spread out the dough until it reaches a desired thickness, and shape the edges with the palms of your hands. Bake at 400 degrees for fifteen minutes.
- Your choice! I used goat’s cheese, fresh basil, and marinara (Whole Foods makes a great marinara – their Organic Fat Free Marinara has no added sugars or oils and is pretty much just tomatoes and spices)
- Bake at 400 degrees for another ten minutes.
It’s definitely different, definitely needed a lot of sauce, but I hope if you need a pizza in a pinch, pantry or health wise, that you can enjoy this!
