We love granola in this house, but I don’t like buying it at the store. It seems like most store-bought granolas are fat and sugar bombs, and not to mentioned overpriced. Plus, with a tree nut allergy it can be rather frustrating to find a type with only the nuts I am allowed to have in it. So, I make it myself! And this, ladies and gents, is my new default granola. It’s so simple, with such subtle flavors that make it the perfect way to add some crunchy whole grains to a yogurt bowl.
Speaking of yogurt bowl, you must try this one! I believe it was on the Tone It Up girls twitter page (how awesome are those girls, by the way?) that I saw a recipe for a breakfast yogurt bowl with Greek yogurt, granola, and broiled kiwi. Broiled kiwi!? I never would have thought of that, and it’s so good! I just sliced the kiwi in half, put it under the broiler for a few minutes, portioned out my granola and added a packet of stevia to my nonfat/ plain Greek yogurt. That’s it! So delicious – give it a try!
Olive Oil & Honey Granola
- 3 cups old fashioned oats
- 1 cup chopped almonds
- 2 tablespoons olive oil
- 2 tablespoons honey
Simply stir all of the ingredients together until dry ingredients are evenly coated. I cook mine on a cookie sheet lined with foil for easy clean up. Bake at 350 degrees for 30 minutes, stirring the granola halfway through. Let cool – the granola will continue to harden and get crunchy as it cools. Enjoy on yogurt, fruit, mixed in trail mix, or with your favorite kind of milk!
