Hello there, friends! What’s cookin’? Not too much over here. Too hot to cook! We have been getting a lot of rain to cool it down, though…although that’s also a con, because that means I’ve been stuck mostly inside for workouts on our indoor stationary bike since I don’t want soggy sneaks in the rain. Yikes, what was that old rule Mom always said? Say two positives for every negative? Well… I am SO blessed that we have the space for (and found such a great deal on) our stationary bike, and I’m also so glad I have this fun place to come hang out and chat (type?) my heart away. ![]()
Eats from this day are basically completely opposite from the Daily Eats on Tuesday. That was a day where I felt like I was barely home. This was a different day, where I basically worked from home with a variety of meetings and errands spread out all over town in between. So, fortunately I was able to get a little creative with cooking meals at home!
Breakfast – same old, same old. The big excitement of the AM? I used a flavored yogurt! Raspberry Fage yogurt reigns supreme to any and all flavored yogurts out there, forever and always! Topped with the usual All Bran (1/2 cup total, add it as I go to prevent sogginess). Gotta love fiber!
Lunch – green eggs! I scrambled 1 egg and 2 additional egg whites with a couple tablespoons of part-skim ricotta cheese and a cup of chopped broccoli. Served with a chopped plum and some off-brand pink lemonade Crystal Light. (I’m on a flavored water kick again…)
Dinner – epic. It was so, so, so delicious, and really so easy. I roasted a pint of grape tomatoes with olive oil, salt, and pepper at 425 degrees until they were all popped and wrinkled – my favorite. Seared salmon in a nonstick skillet (just season slightly with pepper and a drizzle of olive oil and white wine) plus one of the most creative things I’ve made in a while: cauliflower “grits”! (Recipe to come next week).
Snacks for the day included some deli meat, saltines, cheese stick, and of course:

Exercise included (of course) stationary bike & weights! Check out the new Workouts page at the top. I try to update it a couple times a week, but I figured it’d be an extra source of accountability for exercise.
