Another day, another day’s eats!
Breakfast – same old.
Lunch – spinach salad with black beans, chicken, avocado, and melon salsa (recipe coming next Wednesday!). Also enjoyed some juicy strawberries on the side.
Snack – peanut butter and jelly with Polaner jam on Ezekiel whole grain bread
Dinner – an enormous stir fry using up almost all the veggies in our fridge! Tomatoes, broccoli, mushrooms, bell pepper, and thinly sliced extra lean pork. I seasoned it with about a teaspoon of olive, low sodium soy sauce, cumin, chili powder, garlic powder, and ground ginger. So good – I could’ve eaten a bowl of just the vegetables alone!
Dessert – BROWNIES! This was actually kind of a test…I’ve been experiencing some gastrointestinal pain and problems, and well….it’s looking like chocolate may be a culprit. What a tragic loss!
Excuse me while I go mourn the loss of my favorite therapy (just kidding!). I’ll miss you chocolate.
P.S. Being slightly melodramatic – obviously I’ll continue experimenting and soon plan on embarking on an elimination diet of sorts, to see if I can pin point with more accuracy exactly what may be contributing to problems. If you’re experiencing any problems of your own, please speak to a doctor.
