I know the husband and I have had a BUSY weekend! Sorry for the lack of weekend posts! Saturday morning my mother-in-law and sister-in-law came up. Jordan (my SIL) is driving up with the rest of the family, but will leave the holiday festivities with us, so she had to drop her car off at our apartment. It was fun and rather exciting since they had never seen out apartment before and it gave me a chance to do a little “breakfast entertaining”. The husband and I prepared some turkey bacon, tangerine slices, and pomegranate oat scones for our company. Here’s the Pomegranate Oat Scones:

I don’t have time to post the recipe for these now, but if I get a big demand for the recipe in the comments I can post it later (or you can email me at mrslcblog(at)gmail.com). I will say they were delicious and everyone loved them!!

In the midst of other craziness (finishing Christmas crafts/ homemade gifts, baking, oil change/ tire alignment, etc. in my car for the travels, plus MORE) we also managed to find time to make and decorate Chistmas cookies! Ross really wanted to make gingerbread cookies and the only ingredient I (thought) I needed was molasses, so that was easy! The recipe we used was Johanna’s Gingerbread Cookies Recipe from the Food Network website. The cookies are SO good! They’re a really yummy, soft gingerbread cookie (although I imagine you would need a stronger, harder gingerbread cookie if you’re making gingerbread houses). The only ingredient from the recipe that I didn’t have was ground cloves, so I just added a little bit of allspice instead.

haha, I also thought I would try a “cheat trick” and attempt to use a roll of refrigerated Pillsbury sugar cookie dough instead of making sugar cookie dough from scratch. haha, please don’t try this. The cookies spread ENORMOUSLY in the oven. When we took them out, most of the cookies had kind of formed their own jigsaw puzzle and were unidentifiable shapes. Here’s one star that we managed to salvage (by salvage I mean decorate/ give away – this frugal girl throws nada away!).

Ok y’all, well I have to cut this post off because I gotta go! I got nine (glorious) hours of sleep last night, so we still have to wrap a couple gifts/ throw a couple more things in suitcases before we hit the road! We’ll be spending time this week going back and forth between Mariana, FL and Dothan, AL for Christmas with the husband’s family. It’ll be interesting to see different traditions, it’s my first time with his side of the family for Christmas!
