Apple Oat Bran Muffins


Apple Oat Bran Muffins
(makes 12 muffins)

  • 1 egg substitute (I always use 1 TBSP ground flax + 3 TBSP water – let it sit a few minutes before adding other ingredients)
  • 3 Tablespoons unsweetened applesauce
  • 1/4 cup agave nectar
  • 1 cup light vanilla soymilk (or any other milk/ milk substitute)
  • 1 cup whole wheat spelt flour
  • 1 cup oat bran
  • 3 teaspoons baking powder
  • pinch of salt
  • 1/2 Tablespoon of cinnamon
  • 1/2 teaspoon of pumpkin pie spice
  • 1/2 cup chopped dried apples
  • Turbinado sugar (optional to make a sweet, crunchy topping)

Preheat oven to 400*F. Mix all of the ingredients through the spices. Stir in the dried apples. Liberally spray a muffin pan with some sort of non-stick spray (there is minimal fat in the muffins so they’ll want to stick!). Spoon batter into the tins. If desired, top each muffin with a tiny bit of turbinado sugar. Bake for 15 minutes. Let cool a few minutes and enjoy!
