I cannot describe to you how fantastic my pomegranate glazed mahi mahi was. It was simple, it was fast to make, and it was just soo good I probably ate it faster than I made it. I think it may have been the best dish I have ever made. And I make a ton of dishes.
Pomegranate Glazed Mahi Mahi
2 small mahi mahi filets
ground ginger
kosher salt
freshly gound pepper
1/4 c. POM pomegranate juice
zest of an orange
juice from 1/2 an orange (there wasn’t much juice in mine for some reason. I only got about 3 decent squeezes)
drizzle of honey (about 1/2 T.)
more ground ginger
1. Lightly season both sides of your mahi mahi filets with ground ginger, kosher salt, and freshly ground black pepper.
2. Sear the filets over medium-high heat in a medium sized stainless steel skillet with evoo. Continue to cook until mahi mahi reaches 145 degrees F inside.
**Important: if you have a small apartment kitchen with terrible ventilatin, go ahead and put your vent on or open a couple windows. Just forewarning. ![]()
3. In a small saucepan combine the POM juice, orange zest and juice, a light dusting of ground ginger (pr0b. 1/8-1/4 tsp.), and the honey. Bring to a boil so the mixture can reduce (the texture will be inbetween juice and honey).
4. Drizzle or brush (your call!) the glaze over your finished mahi mahi filets. Perfecto!
I still cannot tell you how absolutely fabulous this tasted. I couldn’t believe it when I ate it. I think this was even better than the salmon we served at our wedding (and that says a lot, because that was fantastic and even non-fish lovers liked that salmon!). I know there are some readers out there who are vegetarian or vegan, but I bet if you try this same process with tofu, you’ll still get to enjoy the beauty of the pom glaze. ![]()
The hubs did think the only thing that may improve it was if we grilled it. We only have a George Foreman grill, so I may try making a salad later this week but use the same pomegranate glaze and grill our last mahi mahi filet on the Georey grill instead. I’ll let ya know how it turns out. ![]()
